Chicken Wings - House Hot Sauce
A backyard get-together mainstay, the chicken wing can be even better when you grill them up perfectly crispy-smoky and then drench them in freshly made hot sauce. The heat and smoke go hand in hand and the crowd goes wild!
INGREDIENTS
5oz Banana Peppers
1/2oz Shallots
1/4oz Garlic
3 1/2oz Peeled Carrots
3 Tbsp White Vinegar
1/2 Cup Water
Salt to taste
DIRECTIONS
1. Take ¾ of your peppers and roast them at 375ºF for 25mins. Make sure they are fully cooked.
2. Put all the ingredients into a blender and blend high until smooth. Season to taste. Keeps in the fridge for three weeks.
3. Butterfly your chicken wings and put them on skewers, making sure the skewers go in between the bone and the meat. Use two skewers on opposite ends of the wing to keep them stable.
4. Cook your chicken wings on the grill, checking them often and adjusting as needed. If you have flare-ups as they cooks just move them to a different area of the grill.
5. Once the chicken is fully cooked, remove from the grill and let stand five minutes.
6. Douse in as much hot sauce as you like.
